Easy Camping Meals for Your Next Camping Trip

Going out camping is your chance to take a break from your everyday life,

to get away from chores and enjoy a pared-back lifestyle. 

When it comes to what to eat when you go camping, you want to minimize the fuss without things getting boring - after all, you’re on holiday! That’s why our team at Mojo Campers have compiled a list of the easiest camping meals for your next camping trip.

Note: All of the meals that we recommend are vegan! That’s because it’s better for the environment, lighter on your wallet, and vegan ingredients are less of a hassle to keep cool. These recipes can be easily converted for vegetarians and meat-eaters alike.


Your camping pantry

Our Mojo Sleepervans contain enough storage space to feed two people for a few days, including a high-performance 14 L fridge. If you want more room, our Campervans include a 34.5 L fridge - big enough for plenty of meals for the whole family.

Make sure you’ve got all your food stored in sealed containers and that it’s nice and secure for when you’re driving. 

Here’s our list of some essential food items to stock up on before you head out into the wilderness:

  • Bread/Wraps

  • Muesli

  • Oat or soy milk

  • Canned beans/lentils/chickpeas

  • Tofu

  • Canned tomatoes

  • Rice/Pasta/Noodles

  • Your favourite spices, sauces, & spreads

  • Veggie stock cubes

All Mojo Campers come with a free welcome pack, including tea, coffee, and drinking chocolate. Nothing on the list above should cost you more than five or six dollars, apart from the coconut yoghurt. Don’t forget any extra snacks or treats you might enjoy, such as bliss balls, beers, and biscuits. Read on for some easy recipe ideas!

Breakfast

Peanut butter and banana on toast -  not only easy to make but tasty and filling too!

Muesli and yoghurt - coconut yoghurt tastes delish with muesli. Top with berries or chopped banana.

Big breakfast - great for the day after a hike. Fry up some mushrooms, spinach, and tomato. Make a tofu scramble and sprinkle over some spring onion and chives. Slice up some avocado to spread on your toast. If you want to go the extra mile, get some hash browns a day or two beforehand and keep them in the fridge, so they’re easy to fry in the pan! 

Lunch

Salad sandwiches - there’s nothing like a nice refreshing salad in the middle of an adventure day. Just slap your favourite salad ingredients between two bits of bread, add a bit of mayo, and you’re away! Sandwiches are easy to pack away if you’re heading out on a hike for the day as well. 

Wraps - swap your sandwich for a wrap if you aren’t feeling bread. You can bulk out a wrap with extras from the night before, such as homemade falafel or leftover curry. 

Leftovers - not many people really want to cook a big lunch in the middle of a road trip. A great way to avoid food waste and save time is to chow down the rest of last night’s dinner. Alternatively, feel free to cook up any of the dinner recipes for lunch!

Dinner

Lentil curry - fry onion and garlic in oil with any spices you like. Try cumin, paprika, chilli, turmeric, garam masala, coriander or just a simple mixed curry powder. Add chopped broccoli and carrot, then (drained) lentils. Add canned tomatoes and a veggie stock cube. Serve with rice.

Stir fry noodles - fry onion, garlic, and ginger in oil. Add chopped tofu. When tofu looks golden-brown, add chopped vegetables, such as carrot, broccoli, capsicum, bok choy, and courgette. Once the vegetables are cooked, stir through cooked noodles and soy sauce. Optional extras are chilli, sweet chilli sauce, rice wine vinegar, peanut butter, and Chinese five-spice.

Tomato pasta - cook the pasta and fry some vegetables (we like mushroom and spinach) in plenty of garlic, oil, and canned tomatoes. Mix in some basil, oregano, and parsley for added yum. Season with salt and pepper.

Homemade falafels - for anyone who wants to put in a little more energy, you can actually make a falafel mix by mashing canned chickpeas with spices, lemon, and oil. Or, you can buy a falafel mix at the supermarket. Spoon out small patty sizes and fry in the pan. Serve with salad and any carbs you like - wraps, couscous, rice, or quinoa.

Chilli beans - fry black beans with onion and garlic. Add canned tomatoes, cumin, smoked paprika, plenty of chilli powder, a dash of balsamic vinegar, and salt. Mix in some frozen corn, if you like. Allow it to simmer until all the flavours get soaked up. Serve with salad on toast, with rice, in a wrap, or with quinoa.
