Mix and Match Van Life Wraps

When you’re planning meals for your van trip, you want to make something that’s as easy to throw together as possible. You’re working with limited space and no oven - so while you’re living the van life, you’re better off putting away your fancy foodie cookbooks for the time being.

But that doesn’t mean you can’t eat well! Our vans’ inclusive equipment encompasses everything you need to make tasty, healthy food.

And we thought we’d let you in on one of our FAVE Van Life recipes - quick and easy wraps that make for a delicious addition to your in-van menu.

Wraps

Wraps can be a great choice as they require minimal preparation time during the van trip, where ingredients can be laid out for individual preparation by all members of the group. We have the perfect wrap recipes for breakfast, lunch, or dinner.

Veggie Wraps

Planning on heading out for a lengthy day tramp and searching for the perfect packed lunch? Veggie wraps are a favourite of ours as they are packable, light, and easily customisable.

Ingredients (serves 2)

  • 2 tortilla wraps (large)

  • 1/2 avocado (sliced)

  • 4 slices cucumber (sliced lengthwise)

  • Shredded carrot

  • Fresh spinach leaves (handful)

  • Broccoli sprouts

  • Lettuce

  • Sliced tomato

  • Basil leaves (if desired)

  • 2/3 cup hummus

Method

  1. Lay out the wrap and spread the hummus on the bottom ⅓ of the wrap, spreading out the side edges.

  2. Layer the spinach leaves and lettuce, carrot, tomato slices, cucumber, avocado, sprouts, and basil.

  3. Fold the tortilla wrap tightly, tucking in the contents with the initial roll and then rolling firmly to the end. Feel free to cut it in half and enjoy.

    It’s as simple as that! This wrap is vegan and serves 2, so increase the quantities as required. Make the wrap even more flavourful by adding your favourite flavoured tortilla or dressing, such as Thousand Island dressing.

Chicken Salad Wrap

Modify our original veggie tortilla wrap recipe to discover a delicious chicken salad wrap meal. You can tailor this meal to your own taste preferences, including or omitting as much of the veggie wrap recipe to your liking. While cooking the chicken adds a bit of preparation time, it’s worth it for a memorable meal.

Cut your chicken into roughly 1-inch pieces. Switch out the hummus for chicken pieces and add a sauce of your choice. Pack in more flavour by adding a generous amount of grated cheese to the wrap! 

Tip: chicken thighs are the most succulent, perfect for the chicken salad wrap.

Breakfast Burritos

The simple grab-and-go breakfast which is always a hit when you have adventuring planned. These are often a hit with kids because they feature favourite breakfast foods as ingredients for each wrap, like eggs, bacon, and hash browns. See the meat version or try the vegetarian/vegan option.

INGREDIENTS (SERVES 4-6)

  • Cooking oil (if bacon is not used)

  • Tortilla wraps (large)

  • Bacon/ sausage (one pack)

  • Eggs (one dozen)

  • Cheese (grated)

  • Onion and capsicum (diced)

  • Hash Browns (one pack, diced)

Method

  1. Cook the sausage until browned/the bacon until crispy. Remove and set aside.

  2. Add hash browns and cook until browned (use a spatula to turn at approximately 5-minute intervals). Scramble eggs in a bowl during this step.

  3. Add diced veggies, bacon and/or sausage to the browned hash browns, then pour in scrambled eggs.

  4. Stir to keep from sticking, adding grated cheese. Stir to mix until cooked.

  5. Fill tortillas with cooked ingredients.

Tofu Breakfast Burrito

Appreciate the joys of Breakfast Burritos with the tofu Vegetarian/Vegan option! 

Ingredients (serves 2)

  • Cooking oil

  • 2 tortilla wraps

  • 1 small red onion and 1 capsicum (diced)

  • 150g Extra firm tofu

  • ⅓ teaspoon ground turmeric

  • ⅓ teaspoon cumin

  • ⅕ teaspoon coriander

  • 0.11 cup nutritional yeast

  • ⅓ lime

  • ⅓ avocado

Method

  1. Heat oil over medium heat until hot and add onion, capsicum, and salt. Saute for about 10 minutes until soft. Set aside.

  2. Add tofu onto a medium heat pan and use the spatula to break it into bite-sized pieces. Cook for around 10 minutes, stirring occasionally. Add spices, nutritional yeast, and lime juice. Cook for a few minutes more.

  3. Assemble onto tortilla.

Tip: you can bulk out a wrap by including leftovers from the night before
